A few words about the health benefits of sprouts

LifeSpring uses sprouted mung beans and lentils in several of its menu items, including the bowl o’ beans, because they are an extremely healthy, economical food source.
Chinese dragonThe historical use of sprouted seeds and grains is impressive. Chinese nobles, 5,000 years ago, ate sprouts for healing and rejuvenation. In Chinese medicine, bean sprouts are considered to be a yin, or cooling, food.
During World War II, when the United States was concerned about a possible meat shortage, the scientific community advised the president that the consumption of germinated seeds was the best and cheapest alternative to proteins in meat.
Sprouts are easily grown and 100-percent organic. Just add clean water, and four days later you will have a fully grown, crispy, tasty vegetable. Germination does not require soil, fertilizers or pesticides.
Sprouts are a complete protein that is rich in vitamins, minerals and amino acids. The increase of vitamin content in sprouts during the sprouting period is tremendous – up to 4,000 percent. These natural vitamin complexes contain valuable food components not found in synthetic vitamins, such as sulphoraphanes and isoflavones which work against toxins, resist cell mutation and invigorate the body's immune system.
Because sprouts are a living food, they will continue to grow and increase in vitamin content even after you harvest them. Other vegetables begin to lose their vitamin content as soon as they are picked.
Sprouts are also a good source of live, active enzymes. Digestive enzymes help us assimilate proteins, carbohydrates and fat. Although they play this vital role, our capacity to make them is limited. If we do not get enzymes with our daily food intake, our body's digestive enzymes will carry the complete load, depleting this limited resource. Sprouts are an excellent way to replenish your body.
